Mix Vegetable Curry

Ingredients:   Method:

2 small Potatoes diced
1/2 cup Cauliflower florets
2 small carrots diced
1 green bell pepper (capsicum) diced
1/4 cup Green peas boiled
1/2 cup mushrooms diced
6-8 Baby corn slit into 2
1 tsp finely chopped garlic-
2 cups Tomato puree
1/2 cup Ghee/oil
Salt to taste
1/4 tsp Green cardamom powder
1 tsp Cumin  powder
2 tsp Coriander  powder
tsp Red chilli powder-
1" piece of  Cinnamon
3-4 Cloves (lavang)
1/4 tsp Turmeric powder
1 tsp Garam masala powder
2 tbsp Chopped coriander leaves



Heat oil in a pan and deep fry the vegetables individually just until done and crisp. Drain and keep aside.


To prepare the gravy, heat 2 tbsp oil in a pan. Add the cloves and cinnamon. Add the garlic and onion saute for a minute. Add the tomato puree and the powdered masalas.


Keep stirring on medium heat until the oil leaves the sides of the gravy. Add the fried vegetables. Mix well. Add salt to taste.


Simmer for 10 mins. Remove.


Serve hot garnished with chopped coriander leaves.
